I’ve been working with The Hill House (National Trust for Scotland) for several years, recreating historical dishes based on original family menus. Recent commissions include sardine sandwiches, kedgeree, pineapple pudding, Moffat Toffee, and jellies. These lifelike replicas help evoke the Blackie family’s dining traditions and are used to enhance interpretation across multiple rooms in this historic home.
